Steak Night!
Ingredients:
1 cup rice
Steak
Ripe Plantains
Assorted veggies (bell peppers, broccoli, carrots)
Olive oil
Salt and pepper
Instructions:
Cook the Rice:
Prepare rice according to package instructions
Cook the Steak:
Season steak with salt and pepper
Grill or pan-sear steak to desired doneness
Cook the Plantains & try not to eat them
Slice plantains into diagonal pieces.
Pan-fry plantain slices in olive oil until golden & caramelized. Don’t look away, they’ll burn with the quickness!
Stir-fry the Veggies:
In the same pan, stir-fry assorted veggies in olive oil until tender-crisp. Season with salt, pepper & lemon juice.
Assemble and Serve
