Chicken, Rice & Kale


Ingredients:

  • Chicken…whichever type you prefer!

  • Rice

  • Fresh kale

  • Olive oil

  • Garlic

  • Seasoning for chicken: lemon, salt, pepper, basil & herbs (such as rosemary, thyme, or parsley)

Instructions:

  1. Prep the Ingredients:

    • Ensure all vegetables, herbs & chicken are washed

    • Soak your rice in water for 20 minutes.

  2. Prepare the Kale:

    • Sauté minced garlic in olive oil.

    • Add chopped kale and cook until wilted. Season with salt & pepper…& lemon juice.

  3. Cook the Rice

  4. Cook the Chicken:

    • Season chicken with salt, pepper & herbs

    • Cook in a skillet with olive oil until fully cooked. Remove and slice.

  5. Assemble the Meal:

    • Serve cooked rice in a bowl or plate.

    • Top with sautéed kale and sliced chicken.
