Veggie Fried Rice
Ingredients:
Rice
Arugula
Grape Tomatoes - about 1 cup, halved
Onion
Eggs- 1 egg per person
2 TBS of Soy sauce
Salt and pepper, to taste
2 TBS of Cooking oil (I prefer Olive Oil)
Instructions:
Prep the Ingredients:
Ensure all vegetables are washed & chopped
Beat the eggs in a bowl & set aside.
Soak your rice in water for 20 minutes.
Cooking Process:
Heat a large skillet or wok over medium-high heat and add 1 tablespoon of cooking oil.
Add chopped onions and sauté until translucent and slightly golden.
Add the Eggs:
Push the onions to one side of the skillet and add the beaten eggs to the other side.
Let the eggs cook for a few seconds until they start to set, then scramble them gently using a spatula.
Once the eggs are cooked, mix them with the onions.
Stir in the Vegetables:
Add the chopped arugula and halved cherry tomatoes to the skillet.
Stir-fry for about 1-2 minutes until the vegetables start to wilt and release their juices.
Add the Rice:
Push the vegetables to the side of the skillet and add the remaining 1 tablespoon of cooking oil to the empty space.
Add the chilled cooked rice to the skillet and break up any remaining clumps.
Stir-fry the rice for a few minutes to heat it through and mix with the vegetables.
Season and Finish:
Drizzle soy sauce and sesame oil (if using) over the rice and vegetables.
Season with salt and pepper to taste.
Continue to stir-fry for another 2-3 minutes, ensuring everything is well combined and heated through.
Serve:
Once the rice is hot and nicely coated with the vegetables and seasonings, remove from heat.
