Layered Tuna Salad


Ingredients:

  • 1 can (5 oz) of tuna, drained

  • 1 tablespoon Mustard

  • 2 tablespoons Mayonnaise

  • Handful of Arugula

  • Handful of Spring Mix (or any mixed greens)

  • Handful of Tomatoes

  • 1 Corn on the Cob

  • 1 Can of Chickpeas

  • 1/4 Cup crumbled feta cheese

Instructions:

  1. Prepare the Tuna Mixture:

    • In a small bowl, mix the drained tuna with mustard & mayonnaise until well combined. Season with salt and pepper to taste.

    • Place in fridge

  2. Shuck the Corn/Remove Kernels from the Cob

  3. Saute Corn Kernels & Chick Peas in Olive Oil

    • Allow to cool before assembling salad

  4. Assemble the Salad Layers:

    • Start with a layer of arugula at the bottom of a serving bowl or plate.

    • Spoon half of the tuna mixture on top of the arugula

    • Next, create a layer with half of the sautéed corn & chickpeas

    • Add tomatoes & feta cheese

    • Layer half of the spring mix on top

  5. Repeat the Layers:

    • Repeat the layering process with the remaining ingredients, starting with the remaining tuna mixture

    • Top with the remaining spring mix, sautéed corn, chickpeas, & feta cheese

    • Continue layering until all ingredients are gone

  6. Serve and Enjoy:

    • Serve immediately or place in the fridge then enjoy this flavorful & satisfying Layered Tuna Salad!
